Made turkey burgers yesterday from what to cook when you don't feel like cooking. Recipe calls for cheese but I didn't have any so I skipped that. They were still actually SO good. Served with frozen sweet potato fries from Whole Foods and cole slaw à la Rob. Ended up being a very easy and delicious dinner

One-pot southwestern pasta I like this one and it’s really easy too! Made this while Rob was out of town and had enough leftovers for three more meals PLUS two freezer containers. Calling that a win

Healthy chicken enchiladas. Pretty simple recipe and they were yummy!! More lime next time in the filling + on the side. Would also be better with some more toppings -- cilantro, guac, sour cream would all be good.

I liked the filling a lot -- could also just serve the filling over rice with toppings!

Steak, mashed potatoes and green beans for V-Day! I got two ~.8 lb ribeyes, seasoned with salt and pepper, seared them in butter + olive oil and then finished them off in the oven @ 400. I used our in-oven thermometer to get them to the right temp and it worked GREAT. Will continue doing that going forward.

Green beans were salt + pepper + olive oil in the oven @ 400 for ~20 min. I thought they were overdone but Rob liked so... shrug

Mashed potatoes were microwavable ones from "simply potatoes" muahahah (they're actually really good)

ATK corn muffins & chili. SO unphotogenic but turned out great!! I did the full two hour simmer on the chili and I think it was worth it -- just requires a little thinking ahead. The muffins were good, not as sweet as TJs mix and could've been moister (more sour cream next time?) but got the job done in terms of being freezer-prep friendly.

Peanutty pork and brussels! Except I used turkey bc Trader Joe's doesn't sell ground pork 😡 this a repeat recipe in our household bc it's so easy and it's delish!

Dumpling soup: continuing my love and lemons obsession. This was really good and also easy! 10/10 would make again.

Modifications: used chicken broth + pork gyoza instead of making the recipe vegetarian as called for. I’m sure veggie would be good but I love me the Trader Joe’s pork gyoza!

We topped with chili crisp, scallions and rice vinegar and soy sauce for Rob.
