pepperoncini grilled chicken sandwiches -- Rob said this was not "varied" enough, ie there was too much pepperoncini flavor and not anything to complement it. Fair enough! But I liked this! The chicken was good imo and everything went well together. I just wish it stayed together better. Also Rob's mom said that the burger sauce was really good and I agree!

Cherry tomato, feta and shrimp pasta bake from defined dish dinner tonight - always a hit and great for entertaining bc you basically just have to stick everything in the oven!

Made some burrito bowls — rice made with bone broth, ground beef with taco seasoning, black beans, frozen fire roasted corn, cherry tomatoes, lime cream and pickled red onions. Pretty yum and felt healthy 🤪

Easy chicken parm - bought frozen chicken strips, then cooked them according to package directions. Once they were done, I topped with marinara and Parmesan cheese and put it back in the oven for ~3 min. Served over arugula tossed in olive oil and lemon juice.

Really good for how low effort it was! Rob said it was dinner material 👀

My corn tortillas fell apart yesterday so I made them into chips today instead — much better.

Made them by cutting up corn tortillas into triangles, spraying with avo oil and salting them, then roasting for 15 min @ 350

Greek salad inspired quinoa + chicken bowls - olives, cherry tomatoes, red onion, Persian cucumber, quinoa, roasted chicken breast for the bowl and then I topped it with hummus and tzatziki! Delicious and healthy. Would def make again

Crispy rice salmon bowls - actually obsessed. So good and so filling. The rice does not need to be crispy though. Next time I’d do this w just regular rice I think. The best part was the dressing!

Caramelized banana latte! TBH would be better with another fruit (the banana was kinda weird) but I like the idea of blending fruit with milk for a latte. It was frothy which was nice in an iced latte.

Made some tofu “sushi” bowls for lunch last week. Rice + tofu were made via the steps in this recipe but I chose the toppings (carrots, cucumbers, scallions, spicy mayo) based off an Instagram post that I saw and what we had in our fridge already. Was really yummy and satisfied my tofu craving but I wish the tofu was crispier! I need to figure out how to do that.

Carrot cake baked oatmeal cups for breakfast this week

These were so much better than I expected!! Like actually delicious. I was skeptical about the recipe calling for prunes instead of raisins but they were actually great. Color me surprised.

Swaps: used 4 tbsp flaxseed + 4 tbsp water instead of the eggs bc I’m out of eggs again 🤦🏻‍♀️. And only used 1/4 cup maple syrup (again, bc of a household shortage) and they were plenty sweet.

Eyeballed chicken salad for some lunches: leftover rotisserie chicken, approx 1 stalk celery, a few grapes, handful of walnuts and some mayo and s+p. Perfect. 👩‍🍳😘

vegan chocolate chip cookies - pretty good but I wish they were sweeter. I want to try adding white sugar to this recipe next time I make it.

I like making these vegan sweets - they’re a bit easier than dealing with getting butter and eggs to the right temperature! But definitely not quite as good 😅

Swapped in peanut butter for tahini in this recipe and you can definitely taste the pb — I don’t like tahini so I worry if I made the original I could taste the tahini and I wouldn’t like that.
