Healthy lemon cookies - quite yummy! I also like how easy this recipe is (no softened butter, no mixer required etc) and it’s a cherry on top that they’re gluten and dairy free while still tasting 💯. Not as good as the thumbprint cookies but it’s probably not fair to use those as a measuring stick (bc they’re so good 🥵)

Creamy garlic shrimp with ricotta ravioli from Hello Fresh — I feel pretty weird posting this bc it’s Hello Fresh and I didn’t even cook it!! Not sure I’d make the recipe exactly as written again but it was great inspo. We discussed using smaller tortellini/ravioli next time, a lighter sauce (white wine base instead of cream base?) and that tomatoes could be a nice addition. The cheese + spinach combo of this was a highlight

Sour cream coffee cake: Not like you can really go wrong with coffee cake but a few notes to make this better in the future: taking the time to make the icing would’ve leveled this up, applying the second layer of batter was a little tricky bc it was hard to spread, and I undercooked it a bit. Also I think this would be a great dish to make if we were having people over. We otherwise just don’t need this much coffee cake in our house 😂

Monday dinner was simple but tasty: spatchcocked chicken from salt fat acid heat, pesto pasta and roast green beans. I salted the chicken in the AM with kosher salt and it turned out great - I think the timing and the copious amounts of salt were both useful. The green beans were in the oven for the last 10 min of the chicken roasting plus its 10 min rest. Pesto pasta was leftover pasta and store bought pesto all warmed in the microwave 🤫

Honey garlic chicken -- Overall would make again. Rob said it was better than TJs orange chicken which felt like a win. Technique was good and made good consistency sauce. Was pretty easy to make too! Next time I want to pan fry a bit better to make the chicken crispier.

Made these baked meatballs last week. Flavor was great and I was happy with the effort level but texture was too smooth. I think the texture issue was due to the method that this receipt suggests for combining the meatballs (mixing in breadcrumbs with water then mix that with meat). Next time I'd try with the same ingredients but mix the breadcrumbs and cheese with the meat and then fold in the eggs and water

Love and Lemons granola bars - excellent. Made these last weekend for the first time and had one for breakfast every day this week. They're delicious, easy to prep and just the right amount of food to have pre-Reese walk. Last time I made them slightly off recipe due to ingredient shortages (I swapped some oats for instant oats and some honey for maple syrup). Made them by the book today and we'll see how it pays off -- will update. Rob suggested toasting the oats as a future experiment (for a texture improvement)

Made turkey burgers yesterday from what to cook when you don't feel like cooking. Recipe calls for cheese but I didn't have any so I skipped that. They were still actually SO good. Served with frozen sweet potato fries from Whole Foods and cole slaw à la Rob. Ended up being a very easy and delicious dinner

One-pot southwestern pasta I like this one and it’s really easy too! Made this while Rob was out of town and had enough leftovers for three more meals PLUS two freezer containers. Calling that a win

Healthy chicken enchiladas. Pretty simple recipe and they were yummy!! More lime next time in the filling + on the side. Would also be better with some more toppings -- cilantro, guac, sour cream would all be good.

I liked the filling a lot -- could also just serve the filling over rice with toppings!

Steak, mashed potatoes and green beans for V-Day! I got two ~.8 lb ribeyes, seasoned with salt and pepper, seared them in butter + olive oil and then finished them off in the oven @ 400. I used our in-oven thermometer to get them to the right temp and it worked GREAT. Will continue doing that going forward.

Green beans were salt + pepper + olive oil in the oven @ 400 for ~20 min. I thought they were overdone but Rob liked so... *shrug*

Mashed potatoes were microwavable ones from "simply potatoes" muahahah (they're actually really good)
