Healthy lemon cookies - quite yummy! I also like how easy this recipe is (no softened butter, no mixer required etc) and it’s a cherry on top that they’re gluten and dairy free while still tasting 💯. Not as good as the thumbprint cookies but it’s probably not fair to use those as a measuring stick (bc they’re so good 🥵)
Sour cream coffee cake: Not like you can really go wrong with coffee cake but a few notes to make this better in the future: taking the time to make the icing would’ve leveled this up, applying the second layer of batter was a little tricky bc it was hard to spread, and I undercooked it a bit. Also I think this would be a great dish to make if we were having people over. We otherwise just don’t need this much coffee cake in our house 😂
Made these baked meatballs last week. Flavor was great and I was happy with the effort level but texture was too smooth. I think the texture issue was due to the method that this receipt suggests for combining the meatballs (mixing in breadcrumbs with water then mix that with meat). Next time I'd try with the same ingredients but mix the breadcrumbs and cheese with the meat and then fold in the eggs and water
Love and Lemons granola bars - excellent. Made these last weekend for the first time and had one for breakfast every day this week. They're delicious, easy to prep and just the right amount of food to have pre-Reese walk. Last time I made them slightly off recipe due to ingredient shortages (I swapped some oats for instant oats and some honey for maple syrup). Made them by the book today and we'll see how it pays off -- will update. Rob suggested toasting the oats as a future experiment (for a texture improvement)
Healthy chicken enchiladas. Pretty simple recipe and they were yummy!! More lime next time in the filling + on the side. Would also be better with some more toppings -- cilantro, guac, sour cream would all be good.
I liked the filling a lot -- could also just serve the filling over rice with toppings!
