Dumpling soup: continuing my love and lemons obsession. This was really good and also easy! 10/10 would make again.

Modifications: used chicken broth + pork gyoza instead of making the recipe vegetarian as called for. I’m sure veggie would be good but I love me the Trader Joe’s pork gyoza!

We topped with chili crisp, scallions and rice vinegar and soy sauce for Rob.

Pesto tuna melt from Run Fast, Cook Fast, Eat Slow for lunch! I was planning to be like “it’s cheap to even include this as a recipe in a cookbook” because it’s so simple. But actually it’s even worse bc this could’ve been better! I want my cheese meltier and the tuna warmed through more, so I would cover the pan next time and cook for longer.

Carrot muffins: good base. I used the food processor to try and easily grate the carrots and I regret it. I should actually put in effort to grate them next time. Modifications I made to recipe: pumpkin spice mix instead of the specific spices (good!), no whole wheat flour (ain't nobody got whole wheat flour), no raisins (we're out and Rob doesn't like them but I think these would be better with the raisins).
