pepperoncini grilled chicken sandwiches -- Rob said this was not "varied" enough, ie there was too much pepperoncini flavor and not anything to complement it. Fair enough! But I liked this! The chicken was good imo and everything went well together. I just wish it stayed together better. Also Rob's mom said that the burger sauce was really good and I agree!
Made some tofu “sushi” bowls for lunch last week. Rice + tofu were made via the steps in this recipe but I chose the toppings (carrots, cucumbers, scallions, spicy mayo) based off an Instagram post that I saw and what we had in our fridge already. Was really yummy and satisfied my tofu craving but I wish the tofu was crispier! I need to figure out how to do that.
Healthy lemon cookies - quite yummy! I also like how easy this recipe is (no softened butter, no mixer required etc) and it’s a cherry on top that they’re gluten and dairy free while still tasting 💯. Not as good as the thumbprint cookies but it’s probably not fair to use those as a measuring stick (bc they’re so good 🥵)
Sour cream coffee cake: Not like you can really go wrong with coffee cake but a few notes to make this better in the future: taking the time to make the icing would’ve leveled this up, applying the second layer of batter was a little tricky bc it was hard to spread, and I undercooked it a bit. Also I think this would be a great dish to make if we were having people over. We otherwise just don’t need this much coffee cake in our house 😂
